Whoopie!! Whoopie Pies

My favorite from a cousin in Maine. These are tried and true..There are none better!


CREAM 1/4 CUP SHORTENING AND 1 CP SUGAR
ADD 2 EGG YOLKS AND BEAT UNTIL LIGHT (SAVE WHITES)
SIFT 5 TBS COCOA
2 CPS FLOUR
1 TSP OF EACH BAKING SODA, BAKING POWDER AND SALT
AND ADD TO CREAMED MIXTURE
ALONG WITH 1 CUP MILK AND 1 TSP VANILLA

DROP BY TEASPOONFULS ONTO UNGREASED COOKIE SHEET
350 FOR 10 MINS

FILLING:
BEAT 2 EGG WHITES TILL STIFF AND ADD 1/4 CUP CONFECTIONERS SUGAR SET ASIDE
CREAM 1/2 CUP SHORTENING 1 AND 3/4 CUP CONF. SUGAR AND PINCH SALT PLUS 1 TSP VANILLA
MIX UNTIL SMOOTH STIR IN EGG WHITE MIXTURE
FILL THE COOKIES WRAP EACH IN A SANDWICH BAG AND FREEZE IF DESIRED. I TAKE THEM OUT RIGHT WHEN I WANT THEM. YUM XO

7 layer salad

heather especially likes this!!

Nicely presented in a clear bowl like a trifle bowl
will taste good whatever it is served in!

first layer chopped up lettuce torn small
second 1/3-1/2 cup diced celery
third 1 bunch of green onions chopped fine
fourth 1 package of thawed frozen green peas
I spread the peas on papertowels to thaw
fifth Mix 1 cup of sour cream with 1 cup of miracle
whip spread as a layer
sixth 6-8 ounces of shredded sharp cheddar cheese
seventh 1 pound of bacon cooked and crumbled

Wow I can almost taste this how about you Heather!!

Let it sit in the fridge for a few hours before serving

Boiled Cookies

Daniel likes these especially!!

In double boiler mix 2 cups of sugar
1 stick of margarine or butter
1/2 cup of milk
3 tbs cocoa
mix and boil for 1 minute
add 1 tsp vanilla
add 1/2 cup peanut butter


remove from heat and add 3 cups of old fashion oats
mix well and drop by spoonfuls onto wax paper to cool

These will go fast!

Puppy Chow

One of Kendall's favorite ...

especially at the holidays.

1 12 ounce box of chex cereal
put in a bowl

melt 1 stick margarine or butter add 1/2 cup peanut butter (chunky or smooth) and 1 cup of chocolate chips.

Stir till smooth and melted...pour over chex and stir completely

Put in a paper bag 2 cups of confectioners sugar add chex and shake bag till completely covered.

Probably could mix it in a large bowl as well to evenly coat.

Mom's BEST Banana Bread

I have no problem saying this is the best banana bread that I have ever tasted! I dont ever double this recipe but do one at a time it mixes up fast and I have baked up to 20 in one session! They freeze great! A great gift!

1 stick of margarine or butter
1 egg
1 cup of sugar
beat with mixer
add 3 very ripe bananas. I throw them in whole if the mixer is heave duty or mash on a plate before adding

Add 1+1/2 cup "fluffy" flour....not packed down
1 tsp baking soda
1/2 tsp salt
1/2 cup nuts is optional

mix all together
pour into greased loaf pan or 2 small loaf pans

Bake at 350 degrees for 40 mins for 1 loaf do not over cook but make sure it is done in the middle!

The BEST Hot fudge sauce

Melt 1 stick margarine or butter
add s l o w l y 2+1/2 cups sugar
whisking constantly

add 1/2 tsp salt

add 3 squares of bakers unsweetened chocolate or 9 tbs of cocoa

very gradually add 1 large can of evaporated milk
and 1 tsp vanilla

This is best made in a double boiler so that it will not catch on and burn. Cook 1 hour and 10 mins stirring frequently.

this will make a quart and can be stored in the fridge in a clean mayonaise jar. take out what you need and microwave and There you go!!

Green Jello Salad

Noah's favorite!!

Mix 1 small package of lime jello with 1+1/4 cup of boiling water. mix and cool

add 1 unpeeled and diced Granny Smith apple
plus 1 small can of crushed pineapple

pour into a jello mold or glass bowl


Mis 1 small package of lemon jello with 1+1/4 cups of boiling water. Add 3/4 bar of softened cream cheese. ( You can microwave it to soften it a little) Beat until not lumpy.

Whip 1 cup of whipping cream and fold it into the above cooled mixture. Pour over the green mixture making sure that the green jello is jelled enough to hold the next layer without mixing together.

Put in fridge until firm. It is good to make this the day before you eat or at least the morning before the meal. I tend to double it.

Thanksgiving Dinner Traditions

The Thanksgiving dinner will include:

Turkey: we have had boned, stuffed, fried and traditional
stuffing
gravy
mashed potatoes

fresh green beans
fresh winter squash
yuletide cheezy onions

"green jello" for Noah
olives, pickles, cranberry sauce
cranberry juice and sherbet

after we enjoy gorp, feta triangles, veg tray, fruit, nuts and mints, eggnog, various pies and we eat and eat and eat

we put 3 corn kernals at each place for 3 thanks each

Caramel popcorn

Yeah! Caramel Popcorn

Just in time for the holidays!! Great for teachers presents!

Pop kernals to make 6 quarts of popcorn. I use a dry electric corn popper.
Put popped corn in LARGE bowl or something that you will be able to stir it in without it going everywhere....maybe your wheelbarrow :)

Boil for 5 minutes: 2 cups brown sugar
2 sticks of margarine
1 tsp salt
1/2 cup corn syrup (lite or dark)
Take off the burner and add 1tsp. butter flavor(opt)
and 1 tsp. baking soda

The mixture will begin to expand when mixed throughly with a spoon or whisk. Pour over the popcorn and stir to coat evenly.
Put the bowl if metal or the mixture on cookie sheets in a 200degree oven and stir every 15 mins for 30-60 mins. sometimes I skip this stage it simply causes it to not be sicky.
Pack in a airtight container. I would buy little buckets and pack it for gifts... We make this numerous times a year. Yum!!!

Pumpkin Bars

This is a long time favorite. It is spread on a cookie sheet ..so makes alot. They freeze very nicely as well.

Pumpkin Bars

Feeds ALOT Preheat oven to 350 and bake 30 mins or till done.

Beat 4 eggs, 1and 2/3cup sugar, 1 cp oil and 16 oz can of pumpkin

Sift together : 2 cps flour, 2 tsp baking powder, 2tsp cinnamon,1 tsp salt,1 tsp baking soda,

Add slowly to the creamed mixture until well blended. Spread on an ungreased cookie sheet (15x10)

Take out of the oven. When cool frost with: 3 oz cream cheese, 1/2 cp margarine, 1 tsp vanilla and 2 cps sifted confectioners sugar.

Spread, Cut and EAT YUMMMMM
